Describe a stay in one of your addresses of character.

Lucie Brindjonc: Lounging next to a crackling fire, enjoying breakfast on a terrace, savouring specialties from the local terroir… Quite simply, the joy of taking time out. Our destinations also provide an ideal prelude to exploring the hills and meeting wine-producers, discovering treasures from Beaune to Épernay, roaming around in a horse-drawn carriage or on a bike, or taking to the sky in a hot-air balloon or a helicopter!

The secret for a harmonious blend of stylishness and modernity?

A.R.: We carefully restore buildings full of character, while adding our personal touch. Our approach is to preserve the charm of the past while incorporating modern equipment of exemplary comfort to offer our guests restful havens of peacefulness.

How do you support local areas?

L.B.: We take care to reduce our carbon footprint by limiting plastic and waste, favouring soft mobility and opting for short-circuit suppliers. By supporting local producers, we also highlight regional know-how and contribute to the economic vitality of the areas in which we are based. In 2023, these virtuous practices won the Green Key certificate for the Hostellerie Cèdre & Spa.

Upcoming gems in your collection?

A.R.: From the Côte d’Azur to the coast of Brittany, we are inspired by shoreline settings as much as by havens in wine-producing areas. From hillsides around Annecy to sand dunes on the Atlantic via the garrigues of Provence, we are sensitive to the charms of these places that connoisseurs share with knowing, almost insider, smiles. It is in this state of mind that we will write new stories, continuing to bring talents to light by accompanying them constantly, so that each one feels committed and appreciated (the Hostellerie Cèdre & Spa is certified as a "Great Place to Work", editor's note).
